Romanesco broccoli is a variety of broccoli cabbage (Brassica oleracea var. Italica). Broccoli belongs to the group of plants whose leaves are not eaten but the inflorescences not yet ripe.

This broccoli has been known throughout the Roman countryside for a long time.

Romanesco broccoli resembles a cauliflower, but it is light green, has a pyramidal shape and many small spirally arranged rosettes, rosettes that reproduce the main shape and are repeated regularly. Each rosette consists of several smaller rosettes.

The shape is interesting because it shows a fractal aspect. In fact, the inflorescence has a pyramidal shape and along a spiral the same pyramidal shape is repeated smaller and so on for a certain number of levels (self-similarity). Roman broccoli is rich in minerals such as magnesium, potassium and manganese, as well as antioxidants such as flavonoids. They are also abundant in vitamin C in the form of ascorbic acid and carotenoids which provide considerable quantities of provitamin A. It is a highly emollient product that significantly helps those suffering from gastric reflux and is also one of the so-called "anticancer foods"; clearly you don't have to take the term literally, but it has strong antioxidant capabilities.
